ON THE JOB: FIREHOUSE COOK! Live now on YT. Pete is the absolute best. And he makes the best empanadas, even though he had to abandon them in the middle of frying because the siren went off.
This is @mundersss vision as always. @iammattmichael on sound. jia li on camera. @ginadelaselva on everything including finishing frying the empanadas. @ross_m_laing on the edit.
Aaaand we are always looking for ideas for the next episode. Got any?? 👀👀👀

Caviar and the word “yummy”? Out. Hyper-regional cooking and more seats. In.
No one knows a restaurant like a food critic. For CULTURED’s Art + Food issue, we convened three of the leading members of the field—@priyakrishna, @ruth.reichl, and @matthewschneier—for a candid conversation on the state of going out to eat—and getting paid to write about it.

HELLO! I’m a little late but we have a new episode of On the Job for you, about a marvel of a human named Concetta who feeds people on movie and tv sets. We spent the day on set with her and watched her work her magic. I have never seen a single crew member as beloved as this woman.
AND as a bonus I got to spend the day on set with many of my favorite people who happen to be the ones making this brilliant movie about the world of collegiate Indian dance, Best of the Best, including @hasanminhaj @prashanthvenkat @maitreyiramakrishnan @pkwizzles and so many more. Never imagined I’d ever be on a movie set with mostly brown people. Really cool.
You can watch it all on the nyt YouTube 💫💫
thanks to the team for making this possible! I hope you like our lil labor series! @willtilghman @mcgraw_wolfman @mundersss @iammattmichael @ginadelaselva and Jia Li.

My family, like many Indian families, has a secret spice blend that has been passed down over generations. Ours is called Atom Masala, and it is deeply nostalgic to so many of us. I grew up putting it on everything and I kept it in my backpack in college in an old pill container labeled in Hindi. If I love you, I have probably gifted you some in a tiny vial. But the recipe got lost when my grandparents died. I asked @ccallenfilm if she would document my journey to try and recreate that recipe for my family, involving all my cousins and aunts and uncles and their many opinions, and the result is — as this one commenter put it — “ratatouille for Indian diaspora kids.” And also my dad finally thinking maybe I actually did make the right career choice.
Link to watch in my bio or head to @nytcooking on YouTube. thank you CC and Bryan Gaynor for the edit! And the Times for funding this wild goose chase that took us from Brooklyn to Tokyo to Delhi!!
